Lemon and ginger cordial

Serves 30

50 g root ginger
Crush, grate or chop the ginger
Add some water and boil for 10 minutes
Drain and discard the water (it's bitter)
200 g Lemons
500 ml water
Roughly chop the lemons
Put into pan with the water and the ginger
Simmer for five minutes
Allow to cool and infuse
Put into a blender and whiz it up (optional)
Sieve the liquid and discard the solids
Put liquid back in pan
150 g Sugar
Add sugar
Heat until sugar dissolves and it is close to boiling
Allow to cool
Store in the fridge- should keep at least a month
To serve:
Put 1 tbsp in a glass
add ice then top up with iced water or soda water
